SUMMARY OF QUALIFICATIONS:

More than 15 years experience in a kitchen; over half leading a kitchen brigade, including supervising staff, menu planning, food requisition, inventory and labour/food cost control.

Vast experience in hotel, banquet, and restaurant kitchens with a highly developed sense of taste.

Worked in different culinary fields in Europe, Western and Central Canada to gain experience with local, international, and special/alternative dietary cuisine.

Apprenticed under German Master Chef Olaf Mertens, worked closely with celebrity chefs Ted Reader, Rob Rainford, and Heston Blumenthal, and worked locally with Jason Parsons, Massimo Capra and Frank Dodd.
