According to Chef Marron the name is a reference to the Herman Melville classic, "Moby Dick." The book went to press in Britain originally as "The Whale" — a month later it was published in New York as "Moby Dick," with the subtitle, "or, The Whale." (See Pittsburgh Post-Gazette)
